2 Red onions quartered 
4 sweet potatoes into wedges 
6 parsnips quartered 
2 celariac chopped 
1 bunch of beetroot 
1 packet of rocket 
Handful of walnuts

Dressing ingredients:
1 cup of cashews
1 lemon 
1 garlic clove
1 bunch parsley 
1 bunch chives 
1/ cup of water 

Preheat oven to 200 degrees. Roast the veg with lots of olive oil and salt and pepper. Make the cashew dressing by blending all ingredients until smooth. Once veg is done and cooled, mix with the rocket, top with walnuts and place in a dish with the dressing on the side.
